How these numbers are calculated

Outbound now is the eth0 interface transmit counter, sampled once per minute and divided by the elapsed time. It includes protocol overhead and every service on the host, so it is always slightly higher than the HTTP figure.

HTTP payload and every windowed total (hour, day, 7d, 30d, all time) are the sum of response body bytes recorded by nginx for each request. Headers, TLS framing and TCP/IP overhead are excluded, so these figures represent delivered file content.

Per-project traffic is that same set of bytes, attributed by the first path segment of the request. The buckets are disjoint, so nothing is counted twice and the project totals add up to the HTTP total.

Repository size is reported by rsync at the end of each successful synchronisation, so it reflects what upstream actually published.

Retention: per-minute resolution for about two days, hourly for about 100 days, daily indefinitely. All-time counters are kept separately and survive pruning. The underlying request log carries no identifying data and is discarded every hour.
